  • Man’s relationship with burnt and smoked meat dates back to prehistoric times and is perhaps once of the oldest forms of food preparation still in use today. Now every country has different ways of doing barbeque and grills on open fires and using hot charcoal buried underground etc. Here in Sri Lanka, our indigenous communities also have some interesting ways of burning meat but this review is about a place that has absolutely perfected the American art of smoking meat.

     

    Most of us are familiar with charcoal-based barbeque grills which of course are firm favourites for gatherings at home with friends and family. More recently the task of barbecuing is being taken care of by self-proclaimed “pit masters” whose job is to get themselves dirty and serve up some well-done meat. However, the art of slowly smoking meat is a different ball game all together and there is a significant difference in taste, texture, aroma and the overall look of smoked versus barbecued meat.

     

    Whistling Hog Smokehouse not only built their own smoker from scratch but also created their very own secret dry rubs for the meats on their menu. The seasoned meats are cooked daily on a wood-fire using special wood as well. We came across Whistling Hog first on Facebook and ordered what they call a “Big Momma”.

     

    Now because of the whole smoking process it is safe to order well in advance as items on the menu tend to run out. Delivery is limited for the moment but if you are willing to pick up these guys are located in Mount Lavinia and trust us it’s worth the drive.

     

    So what was in our Big Momma? Ideally serving 4 persons we got half a Chicken, 2 Pork Chops, 1 Rack of Ribs, 4 Garlic Sausages (you can also choose from Kochchi), and 4 regular sides of Garlic Bread, Country Slaw and Mashed Potato. The entire meal also comes with the Whistling Hog signature sauces which are aptly named after truly American icons Bill Ray, Chubby Checker and the King himself Elvis Presley.

     

    For starters when you get this delivered and open it all up the 4190 rupees that you pay for it is totally worth it! Each of the meats has a distinct flavour to it. The ribs were so soft and fall-off-the-bone that they were literally melting in our hands. Then there were the chops that were both sweet and succulent at the same time with that smoky after-taste. Of the three sauces the Bill Ray is Worcestershire based while Chubby Checker is yellow mustard and Elvis is the original BBQ sauce. It’s very difficult to pick a favourite but is we were to pair it up we’d have the ribs with Elvis, the chops with Chubby and the Chicken with Billy! Special mention needs to be made of the Country Slaw and Mashed Potato as well which were ideally done to suit the meal to perfection. Overall we are 100% convinced that this is the best barbecue meal we have had in a long time.

     

    Whistling Hog are hoping to open up a dining area in August and we can’t wait to go there and actually enjoy the meals straight off the grill. Stay tuned for more updates on that.
